Lease negotiated on Bawtry’s historic Town House building for new brasserie
A new eatery is set to open its doors in Bawtry’s marketplace this Thursday (29 August).
Work has been underway to transform The Town House, a prominent heritage building on Market Place, into The Pantry Brasserie.
This will be the third brasserie for owners Kate Lawley and Stephen Gamet, who also own The Pantry 8020 in Misterton and Brigg. The couple also own and run one of Lincolnshire’s top country house wedding destinations – Wootton Hall near Barton-upon-Humber.
Sheffield-based property law specialists Mason Thomas Law assisted Kate with the 7 year lease on the Grade 1 listed building, which has a history dating back to 1691.
A ‘sympathetic redevelopment’ of the property has been underway to transform the building into The Pantry Brasserie.
Kate Lawley said: “Having long admired The Town House from afar, we are absolutely thrilled to be given the opportunity of restoring this iconic heritage building.”
Interior designer Amanda Meade, who specialises in the sympathetic restoration of historic buildings, has been appointed to create a unique interior for the landmark dining experience.
Kate commented: “Amanda’s style is diverse yet elegant. She is just the person to bring back the character and status of The Town House which we appreciate is greatly admired by the community of Bawtry and surrounding areas.”
The restoration, will see the building transformed into a classical brasserie restaurant with an elegant bar, oyster and champagne room, afternoon tea lounge, private dining rooms and a cocktail room.

Negotiation of the lease follows hot on the heels of Mason Thomas Law being named as the Commercial Property Team of the Year at the Sheffield & District Law Society 2024 Legal Awards.
